So there is a certain company that has been making whipped cream since the 60’s with funky ingredients in it. I used to really like that whipped cream to tell you the truth. I vividly remember going to the fridge many years ago and scooping several spoons of this whipped cream and eating it like it was pudding or ice cream (I can’t believe I’m telling you this).
Honestly I was addicted to whipped cream, but it is highly toxic and we should avoid eating it. The ingredients include high fructose corn syrup (HFCS), hydrogenated oil aka trans fats aka recipe for heart disease, “natural flavors” and a lot more junk that our bodies do not need.
So it so it just makes sense to make our own whipped cream using much healthier ingredients like coconut cream! Not only is this recipe really delicious, it offers some health benefits as well. Coconut is 100% a health food. You have healthy fat, antioxidants, vitamins and mineral….much better deal than said popular whipped cream brand.
Anyhow! Enough chatter, to the kitchen!
Whipped Coconut Cream Recipe
2 cans of coconut milk (full fat)
1-tablespoon raw honey
Splash of vanilla extract
Put coconut milk cans in the fridge to chill for a few days, you want the cream to set nicely. Once chilled turn the can upside down, the liquid will be at the top. I am using Thai Kitchen Coconut Milk because that is what is available where I am. If you can get an organic brand from Whole Foods, Trader Joes or other health food store.
Drain the liquid and you will be left with the cream, scoop that into your blender or bowl for hand blending.
Blend cream on low until smooth. Next add honey (you can use powdered sugar or another sweetener) and vanilla extract.
Blend until smooth, taste to make sure you have reached your desired sweetness.
Once finished spoon into a container and store in the refrigerator for up to 2 weeks. You can use this mixture everywhere you would use whipped cream. Try it on your pancakes, smoothies, oatmeal or since Valentine's Day is coming up use this on/in a dessert.
