Game Day Vegan Nacho’s
Vegan snacks and football haven’t really been mentioned in the same sentence until recently! Now that we are combining the two worlds of sports and healthy snacking lets get creative shall we? Today we are gearing up for our Sunday Night Football snacks and this recipe is a twist on the wildly popular and delicious nachos.
I actually really love nachos, but as we know eating nachos often is not so good for your health. Sure you can make nachos with vegan meat, cheese, and other fixings. But where’s the REAL food in that equation? Lets make something for game day that wont leave you feeling heavy or guilty afterwards, yes?
Today the star of this recipe is the purple daikon radish. I found these at the farmers market annnnnd had to get them! Since radishes tend to have a strong, peppery taste I thought paring it with avocado would be great. This is going to balance the intense flavor. Radishes are amazing for our health. They help prevent cancer, high in vitamin C, antibacterial, antiviral, anti-inflammatory just to name a few health benefits. If you can't find purple daikon no worries. Just use the white daikon radish.
Here is what you will need:
4 purple baby daikon radishes
1 ½ - 2 ripe avocados
1/2 lemon juiced
1 tsp. pink Himalayan salt
2 tsp. smoked paprika
1 tsp. chili powder
1 tsp. onion powder
1 tsp. garlic powder
3 tablespoons red onion
1/3 cup diced tomatoes
Pinch of cilantro
Sliced daikon radishes into thin pieces, sort of like chips, and arrange on a plate or serving platter.
Cut avocados length-wise, twist and scoop out the flesh (using a spoon) into a mixing bowl. Mash the avocado just enough to create an even space to seasoning.
Evenly distribute all spices on to the avocado. Using a fork, mix and mash until evenly coated. Now add the onion, tomato and lemon juice. Mix well, or keep it chunky – its up to you.
Add approximately ½ tablespoon of the guacamole mixture onto the radish “chips” until you are all out!
Garnish with cilantro and enjoy!
You could also double this recipe and leave the guacamole in the mixing bowl and serve with the radishes on the side. And you can add nacho favs like jalapenos, black olives or more tomatoes.
