Semi-Homemade Pasta Sauce & Ravioli

I was inspired to make my own pasta sauce after I watching an episode of Not My Mama’s Meals with Bobby Dean. During this episode a really cute lady named Nonna (grandma) taught him how to make her special recipe.

I didn’t follow her recipe to the T, of course then it would not be my recipe. I actually found out after making this that I should have blanched the tomatoes and strained the skin, lol. The sauce still came out quite delicious! It was also very very simple, and I will be perfecting this recipe over time.

Ingredients:

4-6 artichokes hearts

1-tablespoon garlic, minced

2 medium tomatoes, chopped

Approximately ½ cup water

Pink Himalayan salt *to taste

Pepper

Tad of cayenne pepper

Splash of vinegar

½ cup organic pasta sauce or tomato paste

Approximately 1 1/2 tablespoon olive oil

4-5 basil leaves

1 package Rising Moon Organic ravioli

Directions:

1. Combine tomatoes, garlic, artichoke hearts, pasta sauce/tomato paste, water, vinegar, salt, and pepper in a medium saucepan. Cook on medium heat for about 20 minutes until just slightly simmering. Vegetables should be tender. Use a wooden spoon or fork to combine all ingredients and create a chunky sauce texture.Once sauce is done turn the stove off, keeping pot on the stove.

2. Cook Rising Moon Organic ravioli pasta as directed on the package. Drain and return to pot. Drizzle olive oil on cooked pasta and toss.

3. Plate ravioli and gently spoon your pasta sauce over ravioli.

4. Garnish with basil.Enjoy – a glass of wine would be a fabulous addition!
